Flourless Chocolate Cake for a Healthy Dessert Alternative

Baking with Chickpea Flour

When I learned about the secret ingredient that is chickpea flour, I was amazed at how beneficial it can be to your diet. First of all, it’s a gluten-free alternative to refined white flour, with less calories as well.

It also contains a healthy dose of fiber and protein. Just one cup of chickpea flour offers 20 grams of protein and 10 grams of fibers.

Studies have shown that the flour may also have antioxidant properties that help remove free radicals and reduce damage they may have done to your body.

Bottom line….chickpea flour is pretty amazing!

How to Make Flourless Chocolate Cake

Ingredients

  • 4 ounces vegan dark chocolate, chopped
  • 6 tbsp vegan butter
  • 1 cup granulated sugar
  • 1 cup chickpea flour
  • ⅔ cup non-dairy milk
  • ½ cup cocoa powder
  • ½ tsp baking soda
    powdered sugar, for dusting

*These are the ingredients for a 6 inches baking pan.

Flourless Cake Ingredients

Instructions

Preheat the oven to 325 F.  Generously spray a 6″ cake pan and set aside.

Melt the chocolate and butter together, stirring occasionally.

While chocolate melts, whisk together chickpea flour and soy milk until a thick gooey paste has formed. Make sure the chickpea mixture is evenly hydrated throughout.

Once the chocolate and butter are melted, stir in sugar until it is dissolved.

Add chickpea/milk mixture, stirring with a spatula to combine. 

Fold in cocoa powder and baking soda until a uniform batter is achieved.

Transfer batter to the prepared cake pan and bake for 35-40 minutes, until a thin crust has formed and cake doesn’t wobble when gently shaken.

Remove from the oven and let set up in the pan for 30 minutes before transferring to a wire cooling rack to cool completely.

Refrigerate until ready to serve.

Dust with powdered sugar to serve.
